Easy Authentic Mexican Rice

This easy authentic Mexican Rice, also called Arroz Rojo in Spanish, uses simple ingredients and comes out fluffy and flavorful just like Mexican Rice from the restaurant. It is the perfect side dish to pair with any Mexican meal.

  1. Long-grain White Rice
  2. Tomato
  3. Onion
  4. Garlic
  5. Salt
  6. Chicken Bouillon
  7. Oil

Step 1:

Rinse the rice under cold water a few times until the water runs clear. Set aside to let rice finish draining.

Step 2:

In a blender, cut the tomatoes into chunks (about 6 pieces). Add tomatoes, garlic, water, salt and chicken bouillon to blender. Blend.

Step 3:

Heat the oil in a saucepan over medium-high heat. Add the chopped onion and sauté until the onions become translucent.

Step 4:

Add the rice to the saucepan and stir well to coat it with oil. Cook and stir until the rice turns a golden brown, making sure that it doesn’t burn.

Step 5:

Stir in and combine the tomato blend with rice. Let cook until the liquid almost evaporates. When you run your spatula through the rice, the rice should stay separated.

Step 6:

Add the cups of water to the rice, using a 2:1 water to rice ratio. Wait for it all to come to a boil. Then turn down the heat to low/simmer. Cover the saucepan. Set timer for 15 minutes and let rice continue cooking without removing the lid.

Step 7:

Once the rice is done cooking, remove it from the heat and let it sit, covered, for another 10 minutes.

Step 8:

Fluff the rice with a fork. And enjoy!

Again, Mexican rice makes for a great side dish, but if you’re anything like my girls, you can eat it all on its own.
